Roasted Broccoli with Tomatillo Salsa

Sugar free dips and salsas are hard to come by, but we’ve got you covered with this beautiful tomatillo salsa served with roasted broccoli. It’s nice and spicy (you can adjust the heat) and perfect to serve with additional veggies or gluten free crackers. – INGREDIENTS –

For the Salsa
1/2 white onion
1 pound tomatillos
2 cloves of garlic
1-2 jalapeno peppers
1 pound tomatillos
1/2 cup roughly chopped cilantro
2 tablespoons extra-virgin olive oil
a squeeze of lime juice
1 teaspoon sea salt

For the Broccoli
1.5 pounds broccoli
2-3 tablespoons extra-virgin olive oil
